Best Summer Tuna Salad
3oz pouch chunk lite tuna in oil
1 lg granny smith apple, chopped
2oz kosher dill, chopped
2T lite mayo
1t mustard
S/P to taste.
[Makes 1.5c (345cals)]
enough for 3 sandwiches @ 115cals each +bread;
a big, really filling bowl for 1 with a few crackers.

Italian Farmhouse Tuna Salad
6oz pouch chunk lite tuna in oil
1 hard boiled egg, minced
2oz chopped kalamata olives
5oz cherry tomatoes, quartered
3oz sweet onion, sliced very thin
1 large lemon, seeded*
2T capers
1/2t crushed garlic
2T olive oil
2 leave basil, minced
*Juice lemon thoroughly and retain some of the pulp, about 3T
Combine basil, garlic, oil, lemon, salt and pepper – then toss with remaining ingredients. Chill before serving.
[Makes 4 servings of 5oz each for 4 large sandwiches. Each serving: 190cal/13 protein]
Also excellent used as a stuffing for zuchini or other squash, or tomatoes

Grandma’s Tuna Salad Reinvented for the 21st Century
6oz canned tuna in oil
1 hard boiled egg, grated
1oz finely minced celery
1oz grated onion
1oz grated carrot
1oz sundried tomato, minced fine
1T capers
2-3 oz lite mayo
salt and pepper to taste
Chill before serving
[makes 3 generous 4oz servings (239cal each) for 3 sandwiches, or 3 stuffed tomatoes etc.; or, 3 -1/2c scoop-servings]
