yes — it is red and green….
Both because it is really pretty on a party buffet
— and tastes great whether you’re dipping fresh veggies,
chips, or fried cheese sticks —
The color and flavor are more vibrant if you have time to mince your own fresh baby spinach, but in a pinch, the frozen chopped stuff will do.
2 cups organic sour cream
6 oz fresh, organic baby spinach, minced – OR –
10 oz frozen chopped spinach, thawed, drained, and pressed between paper towels
1 package Ranch Dressing Mix
2 T fresh cracked black pepper
1/3 c sm Capers, rinsed and drained on paper towels
1/2 c shredded Asiago cheese (about 1 1/2 oz)
1 hard boiled egg, chopped and pressed through a strainer
8 oz red grape tomatoes
1 t smoked paprika
- combine sour cream, spinach, dressing mix, black pepper, asiago and egg until smooth.
- Gently fold in capers
- turn dip into a clear glass serving bowl and shake on paprika (for color) and arrange grape tomatoes around the edge like a wreath of red
- cover with plastic wrap and chill for at least 3 hrs.
Serve with a plate of snow peas, carrot sticks, broccoli flourettes, green onion stalks, or any favorite dipping veggies. (alternately, serve with pita chips, bagel chips — or actual toasted bagel pieces.
