Lynn’s Great Shakes: Apple Pie Smoothie

I have discovered the apples of the Pacific Northwest.  As a result — well — this is the result:

makes a tall smoothie (about 18-20 oz, depending on the size of fruit)

  • 1 lg or 2 sm organic apples of your choice WITH skin (I’ll go with “Pink Lady”, Jonagold, or Braeburn)
  • 1/2 med banana (frozen)
  • 1/2 c Greek Yogurt, cold
  • 1/4 c apple juice, cold*
  • 1t Penzey’s Vietnamese Cinnamon
  • 1/4 t Penzey’s nutmeg, fresh ground
  • 1 t fresh grated ginger (or crystalized ginger, if you don’t have fresh.  If you use powdered ginger, cut it down to 1/2 t)
  • 1 T lemon juice
  • 1/4 t (just a pinch) lemon zest
  • 1-2 ice cubes
  • pinch of salt

*To make this drink into a Dredd Pirate Apple cocktail, substitute 1/4 c of hard apple cider; add 1 shot of Captain Morgan’s Spiced Rum and 2 more ice cubes.  Garnish with an apple slice and a broken cinnamon stick.
