This is a recipe that works great in a bread machine –but would also make great dinner rolls. It has a wonderful texture — and toasts like a dream — possibly the best toasting bread I make.
The key here is really REALLY fresh sesame seeds — Bob’s Red Mill sells them by the 3-c bag in both white hull-less sesame seeds and natural brown sesame seed varieties. My jar is a mixture of both those products. As the bread bakes, the seeds bake as well — producing a slightly toasty flavor. Toasting the bread by the slice makes this toasted sesame flavor more pronounced.
I plan to find black sesame seeds before I make this recipe again so I can add them to the mix! It’s just an amazingly rich and flavorful loaf.
1 1/4 c Bread flour
1/4 c whole wheat flour
1 c barley flour
1/4 c buttermilk powder
2 T salted butter, melted and set aside to cool down slightly
1 c luke warm water ( +1-2T if necessary for proper dough consistency)
1/3 c honey
1/3 c sesame seeds
1 t salt
1 1/2 T bread machine (quick) yeast
Add liquids to bread machine first, then combined dry ingredients — then yeast. Prepare with a basic setting — on med brown crust.
